Zucchini Hamburger

 


Ingredients
  • 1 pound of Ground Beef, preferably pasture raised
  • 1 tablespoon butter, ghee, coconut oil, tallow or lard
  • 1 cup chopped Onion
  • 1 cup chopped Celery
  • 2 cups chopped Zucchini
  • 32 ounces/4 cups canned Whole Peeled Tomatoes
  • 1 tablespoon chopped Fresh Basil (or 1 teaspoon dried basil)
  • 1 tablespoon Massel Beef Bouillon Granules
  • Garlic Salt
  • Black Pepper
  • 4 cups Cooked Rice or Cauliflower Rice
  • 1 cup of cheddar shredded cheese

Instructions
  1. In a large skillet, over medium heat, brown ground beef
  2. Add fat, onions & celery, cook lightly
  3. Add tomatoes with juice and Massel Beef Bouillon Granules, chopping coarsely large chunks with your spoon, season with garlic salt and pepper, simmer over low for about 15 minutes
  4. Just before serving, add zucchini and cook very lightly. Than top with cheese till melted
  5. Serve over a bed of rice or cauliflower rice
  6. Enjoy!
Notes
You can make this into a soup by adding 4 cups of tomato juice and combining the rice into the dish.
