Zucchini Hamburger
Ingredients
- 1 pound of Ground Beef, preferably pasture raised
- 1 tablespoon butter, ghee, coconut oil, tallow or lard
- 1 cup chopped Onion
- 1 cup chopped Celery
- 2 cups chopped Zucchini
- 32 ounces/4 cups canned Whole Peeled Tomatoes
- 1 tablespoon chopped Fresh Basil (or 1 teaspoon dried basil)
- 1 tablespoon Massel Beef Bouillon Granules
- Garlic Salt
- Black Pepper
- 4 cups Cooked Rice or Cauliflower Rice
- 1 cup of cheddar shredded cheese
Instructions
- In a large skillet, over medium heat, brown ground beef
- Add fat, onions & celery, cook lightly
- Add tomatoes with juice and Massel Beef Bouillon Granules, chopping coarsely large chunks with your spoon, season with garlic salt and pepper, simmer over low for about 15 minutes
- Just before serving, add zucchini and cook very lightly. Than top with cheese till melted
- Serve over a bed of rice or cauliflower rice
- Enjoy!
Notes
You can make this into a soup by adding 4 cups of tomato juice and combining the rice into the dish.
