Oven Baked Goat Cheese Salmon




Ingredients

  • 1 pound fresh wild salmon filet
  • 1⁄4 cup of soft goat cheese
  • 1 TBS virgin olive oil
  • 1 TBS of fresh or dried dill herb
  • 1 sliced zucchini
  • 1 scallion, chopped
  • Salt and pepper

Directions

  1. Lay the fish filet into a oven safe glass pan or dish.
  2. Preheat the oven to 350F.
  3. In a small bowl, mash the goat cheese with the olive oil and dill.
  4. Salt and pepper the fish filet, and then spread the cheese over it evenly.
  5. Lay the zucchini slices on the goat cheese and finish with some pieces of scallions on top.
  6. Cook the fish for 20-25 minutes.
  7. Enjoy!
