Hamburger Soup

 


Ingredients
  • 4 1/2 lb Ground beef (prefer fresh chuck)
  • 1 Sweet onion, chopped
  • 8 Carrots (Chopped)
  • 10 Celery (Chopped)
  • 5 Garlic (Minced)
  • 1 1/2 Quart Tomato Sauce (Whole Food All Natural)
  • 1 Tbsp Rosemary
  • 1 Tbsp Oregano
  • 8 Cups Beef Stock
  • Salt & pepper
  • 4 Tbsp Coconut Oil
Directions
  1. In large Dutch Oven heat 2 tbsp. coconut oil under medium-high. Add meat, season with salt and pepper and brown. Transfer meat to colander and drain. 
  2. Return Dutch Oven to heat and add remaining coconut oil. Add onion, carrot and celery and season with salt and pepper. 
  3. Cook, stirring often until slightly tender, about 8 minutes. Add garlic, rosemary and oregano, stirring constantly for 30 seconds. Add tomato sauce and browned beef and bring to simmer for 15 minutes. Raise heat and add beef broth and bring to boil. 
  4. Reduce heat and simmer for another 20 minutes. Season to taste with salt and pepper
