Kale & Sweet Potato Hash

Kale & Sweet Potato Hash

Ingredients:
3-4 pieces of bacon
1 medium sweet potato
3-4 leaves kale 
1/2 onion
1-2 cloves garlic
1 tbsp thyme
1/2 tsp oregano
sea salt to taste (if desired)

Start by adding bacon into frying pan and cooking to desired crispiness. Then chop the sweet potato and put them into a steamer to cook. While bacon is cooking, chop up onions, garlic, and kale. Once bacon is done cooking remove it from pan and add the onions straight onto the bacon grease in the pan. Cook until soft and then add onions. While these are cooking, chop up the bacon. Add thyme and oregano on onion and garlic, stir in, and then add kale and fully cooked sweet potato to the pan. Cook for about 5 minutes or until the kale becomes tender. Add in the chopped bacon and add a sprinkle of sea salt if desired, stir it all up and then serve hot. You can even add an poached or fried egg on top !!
