Creamy Coconut Turkey Soup

40 minutes, 5 servings,165 calories per serving, dairy free, gluten free 

Ingredients

  • 2 cups organic vegetable or chicken broth
  • 1 ½ cups coconut milk from a can
  • 2 cups small pieces of turkey breast or other pieces of the turkey
  • 2 celery stacks
  • 1 red bell pepper
  • 1 onion
  • 1 large carrot
  • 1 tablespoon curry powder
  • 1 teaspoon cumin powder
  • 1 pinch cayenne
  • Celtic salt and pepper

Directions:

  1. I recommend using organic or all natural broth to avoid all sulfite, MSG and preservatives that we often find in conventional broth and cans.
  2. In a big sauce pan, bring to the broth and coconut milk to a boil. When it starts boiling, reduce the heat to medium/ low and add all the chopped vegetable, meat and spices remaining.
  3. Let simmer for 30-35 minutes.
  4. Eat hot and enjoy.
