Creamy Coconut Turkey Soup
40 minutes, 5 servings,165 calories per serving, dairy free, gluten free
Ingredients
- 2 cups organic vegetable or chicken broth
- 1 ½ cups coconut milk from a can
- 2 cups small pieces of turkey breast or other pieces of the turkey
- 2 celery stacks
- 1 red bell pepper
- 1 onion
- 1 large carrot
- 1 tablespoon curry powder
- 1 teaspoon cumin powder
- 1 pinch cayenne
- Celtic salt and pepper
Directions:
- I recommend using organic or all natural broth to avoid all sulfite, MSG and preservatives that we often find in conventional broth and cans.
- In a big sauce pan, bring to the broth and coconut milk to a boil. When it starts boiling, reduce the heat to medium/ low and add all the chopped vegetable, meat and spices remaining.
- Let simmer for 30-35 minutes.
- Eat hot and enjoy.
