Chocolate Ganache Frosting

Chocolate Ganache Frosting recipe by :  http://www.thenourishinggourmet.com/2009/05/chocolate-fudge-ganache.html 1 cup of cocoa powder 3/4 cup of virgin coconut oil 1/2 cup of honey dash or two of sea salt 1 teaspoon vanilla extract (optional) 1-Gently melt the coconut oil in a saucepan (you don’t want to heat it, just melt it) 2-In a food processor, combine all of the ingredients and pulse until well combined. 3-Scrape into a small bowl and place in the freezer or refrigerator until it has hardened to desired consistency. It took about 15 minutes in my freezer. 4-You can use a hand mixer to fluff the frosting up (you may need to do this if the frosting has become too stiff as well). Spread on desired baked good and enjoy! Chocolate Orange Ganache Variation: Add 1 tablespoon orange zest with the rest of the ingredients. Continue on with the rest of the directions.

  Ingredients 2   tablespoons   olive oil 1   medium yellow onion, diced 8   cloves   garlic, peeled 2   cups   white mushrooms, cleaned and sliced (about 10 ounces) 2   cups   brown cremini mushrooms, cleaned and sliced 1/2   cup   dried tart cherries or dried cranberries 1/2   cup   fresh or frozen corn kernels 2   cups   cooked wild rice (from about 3/4 cups dried) or black rice or riced cauliflower  salt and pepper, to taste 4   tablespoons   fresh green scallions, finely sliced (about 3 to 4 scallions) Roasted sweet potatoes, to serve (optional) Instructions Cook the wild rice according to the package directions. Chicken Salad with Cranberries and Pecans

  Ingredients 3   cups   cooked shredded chicken 2   stalks celery   chopped ½   cup   yogurt   or mayonnaise 1   tablespoon   mustard ½   cup   dried cranberries ½   cup   toasted pecans   chopped Salt and pepper to taste 4   cups   mixed greens Instructions In a large mixing bowl, combine the shredded or diced chicken, diced celery, Greek yogurt (or mayonnaise), Dijon mustard, dried cranberries, chopped pecans, salt, and black pepper. Using a large spoon or spatula, gently fold the ingredients together until evenly combined and the chicken is fully coated with the dressing.
