Orange Cinnamon Butternut Squash

Roasted Squash with Brown Butter and Cinnamon

Ingredients

  • 1 butternut squash
  • 1 TBS virgin coconut oil
  • 1 TBS ground cinnamon
  • 2 TBS cane sugar
  • lemon, juiced
  • Zests from 1 orange
  • Sea salt

Directions

  1. Preheat the oven to 400F.
  2. Slice the squash in half lengthwise, then each half another time, so you have 4 long pieces.
  3. Place the squashes slices in a pan that goes into the oven. Pour the coconut oil over the squash and rub the sugar spices on it. Cover in lemon juice and zests. Salt to taste.
  4. Cook into the oven for 45 minutes.
  5. Serve warm and  enjoy!
