Green Monster Salad 1 &2

Monster 1



For the Salad:

1 head of lettuce
1/3 c fresh herbs,such as mint
1c green grapes
1 cucumber sliced
1/2c crumbled feta
croutons made from paleo bread or sub out for chopped walnuts

For Dressing:

1 t dijon mustard
3T balsamic dressing
4T olive oil
2t RAW honey
couple grinds of sea salt and pepper

Directions:

Prep the lettuce,herbs,cukes and grapes.Place all in a bowl but grapes. Put all the dressing ingredients in a mason jar and shake shake shake! Taste and adjust season. Pour half of the dressing on the salad and toss. Top with grapes,feta and croutons or nuts. Viola!!Yummers!!

Monster 2

Ingredients
  • 3-4 cups various farmers market lettuce
  • 3-4 Persian Cucumbers, thinly sliced
  • 2 Avocados, cut into wedges
  • 2-3 radishes, thinly sliced
  • Kosher salt and pepper
  • Basil Vinaigrette:
  • 1 shallot, roughly chopped
  • 2 cups tightly packed fresh basil leaves, stems removed (about 4 ounces)
  • 1 clove garlic
  • 1/2 teaspoons red pepper flakes
  • 1/2 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon salt
Instructions
  1. Arrange the lettuce on a large platter or bowl.
  2. Scatter the cucumbers, avocados and radishes on top and season with salt and pepper.
  3. Drizzle 1/4 cup of the Basil Vinaigrette on top and toss to combine. Add more vinaigrette if needed and serve immediately.
