Coconut Lime Rice Noodle Salad Ingredients 2 ounces brown rice maifun noodles, also known as brown rice vermicelli (TRY: Annie Chun’s Maifun Brown Rice Noodles) or my favorite yam noodles 2 1/2 tablespoons coconut milk 2 1/2 teaspoons fresh lime juice 1 1/4 teaspoons avocado oil 1 pinch sea salt 1/2 medium mango, peeled, pitted and thinly sliced into 2-inch lengths 1/2 medium red bell pepper, seeded and thinly sliced into 2-inch lengths 1/2 small English cucumber, seeded and thinly sliced into 2-inch lengths 1/2 avocado, peeled, pitted and chopped 1/2 jalapeƱo chile pepper, seeded and thinly sliced 2 tablespoons roughly chopped fresh cilantro leaves 1 tablespoon chopped raw unsalted cashews (toasted, if desired) Directions Prepare noodles according to package directions. Pin it How to Make Garlic Confit Peel the cloves from 2 heads (or more) of garlic. Place the cloves in a small saucepan and pour in enough olive oil to cover them, 1/2 to 3/4 cup for 2 heads. Over medium heat bring the oil to just a hint of a simmer, then reduce the heat to as low as it can go. You want to poach the garlic, not simmer it. Cook for about 45 minutes, until the garlic is soft and tender, but not falling apart. Transfer the garlic with a slotted spoon to a clean jar and pour the oil in to cover the cloves. Cool the mixture to room temperature. Cover the jar tightly and keep refrigerated for several weeks, or freeze for several months. (Keep the cloves covered in oil and be careful about using a clean spoon to dip into the jar). As a variation, add rosemary and/or thyme to the saucepan along with the garlic to cook. Follow us on Pinterest Tip Hero Ingredients & Instructions:(revised) 1 lb boneless skinless chicken breasts, chopped into pieces 1 Tbsp coconut oil 1 cup chopped green onions 1 jalapeƱo, finely chopped 2 cloves garlic, minced 32 oz carton chicken broth 1 tsp ground cumin 1/2 tsp kosher salt or to taste 1/3 cup chopped cilantro 3 Tbsp fresh lime juice 2 large avocados, pits removed, scooped out of the shell 1 Roma tomato, diced (or you could top with salsa) Tortilla chips, monterey jack cheese, sour cream for serving (optional) 1. Heat the oil in a large sauce pot over medium heat. 2. Add the onions, jalapeƱo and garlic. Saute about 2 minutes until the onion has started to soften. 3. However, I am not a fan of red cabbage, so I substituted red onion for extra tang and crunch. Please feel free to use the traditional cabbage instead. As it seems, the recipe is very customizable.
