Simple Paleo Salad-in-a-Jar with Mustard Vinaigrette

Ingredients
- 1 medium cucumber, chopped
- 1 red bell pepper chopped
- 1 large carrot, julienned
- Sunflower seeds, to taste
- Fresh parsley, chopped, to taste
- 1 head romaine lettuce, chopped
For the dressing
- 1/4 cup extra virgin olive oil
- 1 tbsp Paleo mustard
- 2 tsp balsamic vinegar
- Juice of 1/2 lemon
- Salt and freshly ground pepper, to taste
Instructions
- Whisk together the ingredients for the dressing in a small bowl.
- To make the salad, first pour 2 tablespoons of the dressing into the bottom of a pint-sized mason jar. Next add the bell pepper, cucumber, and carrot, followed by the sunflower seeds and parsley. Pack the rest of the jar with the chopped romaine. Screw on the lid and store in the refrigerator for up to 5 days.
