Cheesy Meatballs
Keto Cheesy Meatballs in Tomato Sauce š
Ingredients:
Condiment Mixture:
¾ cup chopped onions
5 garlic cloves
1 tbsp fresh thyme leaves
1 tbsp fresh rosemary leaves
½ tsp dried oregano
1 tbsp avocado oil
Meatballs:
1.4 lb ground beef
1½ tsp salt
2 tsp paprika
¼ tsp black pepper
1 large egg
3 tbsp almond flour
1 tbsp parmesan cheese
½ of the condiment mixture
Tomato Sauce:
1 (28 oz) can whole peeled tomatoes
1 tsp salt
½ of the condiment mixture
Topping:
1 cup mozzarella cheese, grated
Fresh parsley, chopped
Instructions:
1. Prepare the Condiment Mixture: In a food processor, combine chopped onions, garlic cloves, fresh thyme, fresh rosemary, dried oregano, and avocado oil. Process until it forms a smooth paste.
2. Make the Meatballs: In a large bowl, mix ground beef, egg, half of the condiment mixture, salt, paprika, black pepper, parmesan cheese, and almond flour. Combine well until fully incorporated. Form into meatballs of your desired size.
3. Cook the Meatballs: Heat avocado oil in a large skillet over medium heat. Cook the meatballs, turning occasionally, until browned on all sides and cooked through. Remove and set aside.
4. Prepare the Tomato Sauce: In the same skillet, add the remaining half of the condiment mixture and sautƩ for 1-2 minutes. Add the whole peeled tomatoes and salt. Break up the tomatoes with a spoon and simmer until the sauce thickens slightly.
5. Assemble and Bake: If using an oven-safe skillet, return the meatballs to the skillet with the sauce. If not, transfer the meatballs and sauce to a baking dish. Top with grated mozzarella cheese.
6. Bake: Place in a preheated oven at 400°F (200°C) and bake for 15 minutes.
7. Broil: Switch the oven to broil and cook for an additional 3 minutes, or until the cheese is golden and bubbly.
8. Garnish and Serve: Sprinkle with freshly chopped parsley before serving. Enjoy over cauliflower rice for a low-carb option.
