Almond Flour Cookies w/ Cranberries and Coconut




1 1/4 c blanched almond flour
1/4 c dried cranberries
1/2 c shredded unsweetened coconut
1/2 t baking powder
1/4 t sea salt
1/3 cup RAW brown sugar
1 egg
3 T coconut oil, melted
1/2 t vanilla extract

Preheat 375 F. In a large bowl, combine blanched almond flour, dried cranberries, coconut, baking powder, sea salt and brown sugar. In a separate bowl beat egg till doubled in volume. Whisk in coconut oil and vanilla than add to dry ingredients and mix till combined. Chill in freezer for 15 minutes.

Shape dough into 1 inch balls, place on baking sheet 1 1/2-inch space between each. Press down lightly. Bake 7-10 minutes. Enjoy!!
