My Taco Peppers

 

Fillling:
1lb of lean ground meat
1 link of mexican chorizo-remove the skin
3-4 colored peppers with top cut off
1 garlic clove,mince
2-3 T homemade taco season(it is on my blog)or 1t cumin,2T chili powder
1/2 onion,chopped fine
the tops of peppers chopped fine
1/2 c frozen corn defrosted(I let is sit on the counter while preparing the peppers
I used half cup raw black rice cooked(special treat)or zucchini and olives chopped fine about 1cup total
Sauce:
2c homemade salsa (on blog) or your favorite.
 grated kerrygold cheddar to top peppers




Brown meat,chorizo till almost done.If you have drain the grease drain it.Than add your spices and stir real good and add all your veggies.Saute till it is moist and no juice.Adjust season.Taste may need more taco season or more chili powder.Than add rice.

 
Pour salsa in a baking dish set the peppers in it and fill peppers with filling.Cover and Bake 350 for 25 minutes.Last 5 minutes uncover and  top each pepper with cheese.Serve with guacamole,sour cream and hot sauce...
