Mexican Meatloaf
Imagine if Taco Tuesday got the country cooking treatment: that's Mexican Meatloaf in a nosh-worthy nutshell! The tender, juicy, savory beef is elevated with spicy taco seasoning and creamy avocado, not to mention cheddar cheese and salsa: it's meatloaf like you've never had it before! Mexican Meatloaf is a delicious home-cooked date night meal, as it makes two loaves: one for you and one for your special someone. Alongside mashed potatoes or roasted corn, this meatloaf is guaranteed to amaze.
Ingredients
• 2 large egg, lightly beaten• 1 can Rotel, drained• 1/2 cup tortilla chips, crushed ( if keto use almond flour instead)• 1/2 cup cheddar cheese, shredded• 1/2 cup salsa• 3 tablespoons taco seasoning• 1/4 onion, diced• 1/2 ripe avocado, diced• 1/8 teaspoon pepper• 1 pound lean ground beef + half a tube of Mexican chorizo (beef or pork)Directions
Step 1
Preheat the oven to 350 degrees F.
Step 2
In a bowl, combine the egg, tomatoes, tortilla chips, cheddar, salsa, taco seasoning, onion, avocado, and pepper.
Step 3
Crumble the beef over the mixture and stir until well combined.
Step 4
Shape the mixture into 4 loaves.
Step 5
Place the loaves onto an ungreased 8-inch baking dish.
Step 6
Bake until the meat is no longer pink and a thermometer inserted into the thickest part reads 160 degrees F, about 30 minutes. The last 10 top w/ red enchilada sauce or salsa and sliced cheddar cheese. Add back into the oven about 10 minutes.
Step 7
Serve hot.
