These vegan, paleo cucumber and lime popsicles are super creamy and refreshing — and perfect for hot summer days. These are all about hydration, due to the mega-quenching cucumber, which helps to get rid of any bloat (so good for pool season!) and makes your skin absolutely glow, and lime adds an awesome zip. Cucumber + Lime Popsicles Makes 6 popsicles Ingredients 1 large cucumber, peeled and cut into large chunks 1 can full fat coconut milk Juice + zest of 2 limes (preferably organic, since you’re using the peel) 3 tablespoon of sweetener of choice (honey, agave, maple syrup, rice malt syrup and even 4 - 5 Medjool dates, pitted and soaked in boiling water for 10 minutes, all work wonderfully) Pinch of salt Preparation Blend all ingredients until well combined, then pour into popsicle mold, champagne flute or dixie cups, tapping it on the counter to eliminate any bubbles, and freeze overnight (if using champagne flute or dixie cups, add popsicle sticks after 1 hou...

1 1/2 c Almond Flout 1/4 c Tapioca Flour 2 T coconut sugar 1 T Baking Powder 1 T Coconut Flour 1 t cinnamon dash of sea salt pinch of baking soda 1 t vanilla 2 eggs 1/2 cup of almond milk METHOD: Combine all the wet ingredients and the dry seperate. Than combine the wet and dry. Add to a greased waffle iron. Top with berries and REAL maple syrup

ZUCCHINI SALAD WITH ROSE SAUCE By: Rose Marie Jarry, Master Chef at  Kronobar Ingredients 4 cups zucchini, spiralized or finely chopped 1 cup rutabaga, spiralized or finely chopped ¼ cup onions, finely sliced ½ cup whole raw walnuts Fresh herbs of your choice Dressing: 1 lemon, juiced ½ cup sundried tomatoes, soaked 2 tablespoons coconut creamed paste ¾ cup water 1 teaspoon smoked paprika 1 tablespoon cooked or raw beet 1 pinch celtic salt 1 pinch ground pepper Directions Use a spiralizer to cut the zucchini and rutabaga into long and thin pieces. If you don’t have a spiralizer, you can either shred them or cut them in long and thin pieces with a Chefs knife. Cut the onion into long and thin pieces as well. Mix all the veggies together in a bowl and set aside. Soak the sundried tomato in water for 15-20 minutes, then drain and put them in a blender. Cucumber Apple Green Gazpacho Makes:  2 servings Ingredients: 1 large English cucumber 1 small green apple 1 cup green juice (try  Evolution Fresh Sweet Greens and Ginger ) 2 tbsp extra-virgin olive oil 2 tbsp sherry vinegar 3 small yellow tomatoes 2 garlic cloves 1/4 cup blanched almonds or pine nuts Generous amount of sea salt and freshly ground black pepper 1/2 teaspoon grated fresh ginger (optional) Directions: 1.  Blend all ingredients together. 2.  Season liberally with salt and pepper and serve with a drizzle of olive oil.
