Asian Sweet & Spicy Drumsticks
Ingredients:
- 8 chicken drumsticks
- ¼ cup soy sauce
- 2 tbsp honey
- 2 tbsp brown sugar
- 1 tbsp rice vinegar
- 1 tbsp sriracha (adjust to taste)
- 2 tsp sesame oil
- 2 cloves garlic, minced
- 1 tsp grated fresh ginger
- ½ tsp red pepper flakes (optional for extra heat)
- 1 tbsp cornstarch mixed with 2 tbsp water (slurry for thickening)
- 1 tbsp sesame seeds, for garnish
- 2 green onions, chopped, for garnish
Instructions:
Marinate the Chicken:
In a large bowl, whisk together soy sauce, honey, brown sugar, rice vinegar, sriracha, sesame oil, garlic, ginger, and red pepper flakes. Add the drumsticks and toss to coat. Cover and marinate in the refrigerator for at least 1 hour (or overnight for deeper flavor).Preheat the Grill:
Heat your grill to medium-high heat (about 375-400°F). Lightly oil the grates to prevent sticking.Grill the Drumsticks:
Remove the drumsticks from the marinade (reserve the marinade for the glaze). Place the drumsticks on the grill and cook for 25-30 minutes, turning occasionally, until they are evenly charred and reach an internal temperature of 175°F.Make the Glaze:
While the drumsticks are grilling, pour the reserved marinade into a small saucepan. Bring to a boil over medium heat and simmer for 3-4 minutes. Stir in the cornstarch slurry and cook until the sauce thickens into a glaze.Glaze the Drumsticks:
In the last 5 minutes of grilling, brush the thickened glaze over the drumsticks, allowing it to caramelize slightly. Flip and glaze both sides.Serve:
Remove from the grill, garnish with sesame seeds and chopped green onions, and serve hot with rice or a fresh salad.
