Keto Cabbage Bake
Ingredients:
1 medium head of cabbage, chopped
1 pound (450g) ground beef or ground turkey
1 small onion, diced
2 cloves garlic, minced
1 can (14 oz) diced tomatoes, drained
1 cup (240ml) tomato sauce (look for one with no added sugar)
1 cup (240ml) beef or vegetable broth
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon crushed red pepper flakes (adjust to your spice preference)
Salt and pepper to taste
2 cups (224g) shredded mozzarella cheese
1/4 cup (28g) grated Parmesan cheese
Fresh basil or parsley for garnish (optional)
Directions:
Preheat your oven to 375°F (190°C).
In a large skillet, cook the ground beef or turkey over medium heat until it’s browned and cooked through. Remove any excess fat.
Add the diced onion and minced garlic to the skillet with the cooked meat and sauté for a few minutes until the onions become translucent.
Stir in the drained diced tomatoes, tomato sauce, beef or vegetable broth, dried oregano, dried basil, crushed red pepper flakes, salt, and pepper. Simmer for about 5-7 minutes, allowing the flavors to meld.
In a large oven-safe casserole dish, layer half of the chopped cabbage.
Pour half of the meat and tomato sauce mixture over the cabbage.
Sprinkle half of the shredded mozzarella and grated Parmesan cheese over the meat layer.
Repeat the layers with the remaining cabbage, meat and tomato sauce mixture, and cheeses.
Cover the casserole dish with foil and bake in the preheated oven for 30 minutes.
Remove the foil and bake for an additional 20-30 minutes, or until the cabbage is tender, and the top is golden and bubbly.
Let the casserole rest for a few minutes before serving. Garnish with fresh basil or parsley if desired.
