Middle Eastern Beef Stew Recipe
Ingredients:
- Beef stew meat (cubed)
- Tomato paste (about 2 tablespoons)
- Leeks (1–2, sliced)
- Carrots (2–3, peeled and chopped)
- Potatoes (2–3, peeled and cubed)
- Onions (1 large, chopped)
- Turnips (optional, peeled and diced)
- Garlic (3–4 cloves, minced)
- Ground cumin (1 teaspoon)
- Ground coriander (1 teaspoon)
- Ground cinnamon (1/2 teaspoon)
- Ground turmeric (1/2 teaspoon)
- Ground paprika (1/2 teaspoon)
- Salt and pepper (to taste)
- Olive oil (2 tablespoons)
- Beef or vegetable broth (about 4 cups)
- Fresh parsley or cilantro (for garnish)
Instructions:
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add the chopped onions and minced garlic. Sauté until the onions are translucent.
- Add the beef stew meat and brown it on all sides.
- Stir in the tomato paste, ground spices (cumin, coriander, cinnamon, turmeric, and paprika), salt, and pepper. Mix well to coat the meat.
- Add the sliced leeks, chopped carrots, cubed potatoes, and diced turnips (if using). Stir to combine.
- Pour in the beef or vegetable broth. Bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for about 1.5 to 2 hours, or until the meat is tender and the vegetables are cooked.
- Taste and adjust the seasoning if needed.
- Serve the stew hot, garnished with fresh parsley or cilantro & diced cucumber. Serve over riced cauliflower.
