Easy Peasy Cheesy Crackers
Preheat oven to 400 degrees F.
Line baking sheet with unbleached parchment paper.
Add cheese slices leaving about 1/4 inch between.
Bake for 10-12 minutes or until browned.
Using a paper towel, dab each cheese slice to absorb the oil.
Leaving cheese on parchment paper, transfer to wire rack to cool.
Will crisp once completely cool.

  1. Add diced tomatoes and coconut milk to blender.
  2. Process on high until smooth. (Use soup variable if using Vitamix)
  3. If using high-speed blender, transfer soup to stovetop to heat.
  4. Enjoy!
