Sweet Potato Bisque by the Blender Dude
Sweet Potato Bisque
The heat has finally started to break where I
live which means I’m going to be on the lookout for some great soup
recipes. Here’s one from Blendtec featured as their “Recipe of the
Week.” Sweet potatoes are loaded with Vitamin A! Coconut milk isn’t
mandatory but works great in this one. A recipe for it is right here.
1 tbsp. olive oil
2 medium sweet potatoes, baked
1 medium onion, rough chopped
1 clove garlic, rough chopped
3 cups chicken or vegetable broth
1 cup lowfat milk
1/4 tsp. chili powder
1/4 tsp. ground cumin
1/4 tsp. black pepper
Add oil to saute pan and cook onions and garlic over medium heat
until tender. Remove skin from baked sweet potatoes. Add broth, milk,
seasonings, sauteed onions and garlic, and baked sweet potatoes to jar.
Run on “High” speed for 1 1/2 to 3 minutes, depending on desired
temperature (“Soups” cycle with a Blendtec). Serve warm.
