Chicken Bacon and Banana Muffins

Ingredients
  • 850g (13oz) Chicken Thigh or Breast Fillet
  • 200g (7oz) Pasture Raised Bacon
  • 4 Bananas (3 for muffin mix and 1 for garnish)
  • 3 Free-Range Eggs
  • ¼ tsp. Rock or Sea Salt
  • Coconut Oil

Cooking Steps

Don’t screw your face up until you have tried these! When chicken, bacon and bananas hangout together, they instantly start a party in your mouth and all of your tastebuds are invited.
METHOD
1. Preheat oven to  (350°F) and grease a muffin tray with coconut oil.
2. Lightly grill or pan fry bacon and set aside to cool.
3. Place chicken, bacon, eggs, salt and 3 bananas into the food processor and whizz up until it forms a thick paste with small chunks of bacon.
4. Evenly spoon mixture into 12 muffin trays and top with a slice of banana.
5. Place in oven and bake for 25-30 minutes or until muffins are firm.
**NOTE – If you don’t have a food processor, you can use chicken mince, finely chopped bacon and mashed banana.
