Easy Soup Recipe

I love a great soup recipe. Also when it is keto and has veggies to boot. This is one of my simple recipes that I can make in the Instapot and I can eat all day. You can use a big can of organic diced tomatoes if your tomatoes are not looking to great this season. Just look for no sugar. Enjoy!

INGREDIENTS
- 1 white onion, diced
- 3 garlic cloves, minced
- 4 celery stalks, diced
- 4 roma tomatoes, diced
- 4 cups sliced cabbage
- 2 cups strained tomato (puree)
- 6 cups veggie stock or bone broth
- 1 tbs extra virgin olive oil
- 1 tsp salt
- 2 tbs italian seasoning
- 2 cloves of garlic or 1TBS garlic powder
DIRECTIONS
- In a large pot over medium heat sautee the onions in the olive oil. Once soft add in the garlic, celery, and spices and cook for 2 minutes.
- Next add in the fresh and strained tomatoes, broth, and half the cabbage. Cook for about 30 minutes on medium low heat.
- Add in the remaining cabbage and cook for another 10 minutes.
