SPICY SHRIMP AND CORN WITH BEAN THREAD

  • 1 Onion (diced)
  • 2 Cloves Garlic (minced)
  • 2 Habaneros (minced)
  • 1 Cup Corn
  • 1 Pound Shrimp (cleaned and deveined)
  • 12 Ounces Bean Thread Noodles
  • 2 Tablespoons Gochujang
  • 2 Tablespoons Soy Sauce
  • 2 Tablespoons Sriracha
  • 1 Tablespoon Rice Vinegar
  • 1 Pinch Sugar
  • Cilantro

INSTRUCTIONS

  1. Boil water and pour over noodles in a bowl. Let soak until tender. Rinse well because they are super starchy.
  2. Saute the onion for 5 minutes. Add the corn, habanero, and garlic and cook 2 minutes.
  3. Shrimp go in next, Cook 2 minutes then add the soy sauce, sriracha, sugar, vinegar, and gochujang. If you are a regular of my blog and you don't always have gochujang in your fridge by now, then I have failed you. Kidding. But I use it in a lot of Asian cookin. Cook 2-5 more minutes until the sauce comes together and the shrimp are cooked. Remove from heat. Taste and adjust seasonings as needed.
  4. Pour the sauce over the noodles, mix, add in some cilantro, and serve. Soo good.
