Egg Custards These egg custards are a fun way to spice up a family brunch. Enjoy this breakfast with a side of fresh fruit, sauteed vegetables, or both! Serves: 4 Ingredients 4 Egg 5 pieces Bacon , cooked and crumbled 1/2 cup Coconut Milk , (full fat) 1 cup White Mushrooms 2 Tbsp Chives , chopped 1 tsp Salt and Pepper , to taste Process Preheat oven to 350°F. Fry bacon in a cast iron skillet on medium heat until crispy. Remove bacon from skillet and reserve excess bacon fat in a small glass dish. Sauté mushrooms in seasoned skillet until tender - about three minutes. In a medium sized mixing bowl, whisk eggs and coconut milk until fluffy. Season eggs with salt and pepper. Crumble bacon and add to egg mixture. Add mushrooms and chives and stir until all are evenly combined. Pour egg mixture into four 6oz. ramekins. Roasted Onion Noodles with Bolognese

  Roasted Onion “Pasta” Noodles Ingredients: 4 large vidalia onions olive oil Kosher or finely ground sea salt freshly ground black pepper One Recipe Bolognese Sauce - If you are strict Paleo, leave out the Parmesan Cheese Instructions: Preheat oven to 400 degrees. Cut root and stem end from the onions, peel, and slice into 1/4 inch slices. Separate rings and place in a large roasting pan. You may have to use 2 pans.  Drizzle with a generous amount of olive oil and sprinkle with a bit of salt and pepper. Roast for 30 minutes or until onions become tender and begin to brown, some pieces may even toast up a bit- yum! You may want to give them a stir halfway through roasting. Plate and top with Bolognese Sauce, or another sauce or stew of choice. Serves 4. Note: I case you were wondering, I did not experience any re-belch-a-burp-atation with the onion pasta. Consider making extra bacon for breakfast.  Keep several pieces aside for use in recipes; strain the grease and use it instead of cooking oil when making savory dishes.  The flavor is fantastic. Cauliflower for this dish should still be reasonably firm.   I prefer to steam it for about 10 to 12 minutes, just to the point of tenderness.  You could steam it longer and mash it like you would potatoes.  Keep in mind that it will continue cooking in the oven. Ingredients 1/4 cup Mayonnaise 2 Tbsp Pickles , diced 1/2 tsp Dill Weed 1 tsp Lemon , zest only 1/4 tsp Salt , (a pinch) Process In a small mixing bowl, combine diced pickles and mayonnaise.
