Keto Chile Rojo(Verde)
My Recipe for Chile Colorado (Rojo)
5 lbs of pork shoulder, cut up big chunks
1 onion, chopped
4 cloves of garlic, minced
1 can of diced tomatoes
1 8oz can of diced green chilies
1 can tomato paste (small)
2 T cumin
1.5 T chili powder
1T garlic salt
1T garlic powder
black pepper
1 chipolte pepper in adobo chopped up
Toppings:
sour cream, chopped onion, red chili flakes. mozzarella, avocado
Method:
Brown the pork in coconut oil till brown. Add the onion and garlic and mix. Then add all the mixture to your slow cooker or IP. Then top with the tomatoes, chilies and spices. Mix and set for 7 hours. Or Instapot it on the stew mode. Then serve in bowls and top with your favorite toppings.
