Black Bean Quinoa Salad
INGREDIENTS
  • 15 OZ CAN DRAINED BLACK BEANS
  • 1 CUP QUINOA, COOKED
  • 1 CUP CORN
  • 1 YELLOW BELL PEPPER, CHOPPED
  • 1 CUP ONION, CHOPPED
  • 1 CUP CHERRY TOMATOES, QUARTERED
  • 1 AVOCADO, CLEANED AND DICED
  • 1/2 CUP FRESH CILANTRO, CHOPPED
  • 1 TBSP GARLIC, MINCED
  • 3 TBSP LIME JUICE
  • 1 TBSP OLIVE OIL
  • 1/2 TSP CHILI POWDER
  • 1/4 TSP CUMIN
  • TO TASTE SALT & PEPPER
METHOD:
  1. Combine all ingredients and portion into 4 servings.
  2. Store in an airtight container in the refrigerator.
  3. Serve over a bed of arugula and spinach.
