Black Bean Quinoa Salad
INGREDIENTS 15 OZ CAN DRAINED BLACK BEANS 1 CUP QUINOA, COOKED 1 CUP CORN 1 YELLOW BELL PEPPER, CHOPPED 1 CUP ONION, CHOPPED 1 CUP CHERRY TOMATOES, QUARTERED 1 AVOCADO, CLEANED AND DICED 1/2 CUP FRESH CILANTRO, CHOPPED 1 TBSP GARLIC, MINCED 3 TBSP LIME JUICE 1 TBSP OLIVE OIL 1/2 TSP CHILI POWDER 1/4 TSP CUMIN TO TASTE SALT & PEPPER METHOD: Combine all ingredients and portion into 4 servings. Store in an airtight container in the refrigerator. Serve over a bed of arugula and spinach.
