Bacon Wrapped Avocado Slices

Bacon Wrapped Avocado Slices 2 medium avocados, sliced into 12-14 slices 6 or 7 slices thin bacon, cut in half crosswise Preheat oven to 425 degrees. Line a baking sheet with parchment paper. Wrap each avocado slice with half a piece of bacon and place on prepared baking sheet. Bake until bacon is crisp, about 26-28 minutes. Cool and serve with salsa, if desired.

  Here’s what you’ll need...  * 1 LB Large Shrimp (Headless, but not peeled)  * 1/3 Cup Honey  * 1/4 Cup Fresh Lemon Juice  * 3 TBSP Extra Virgin Olive Oil (EVOO)   * 2 Garlic Cloves, Minced * 1/2 TBSP Salt  * 1/2 TBSP Cumin * Cherry Tomatoes  Here’s how you make it...  1. Combine lemon juice, EVOO, garlic, salt, honey, and cumin into a large bowl.  2. Thread the shrimp and tomatoes alternately onto the skewers.  3. Place skewers into a shallow dish; drizzle 1/2 the lemon juice mixture onto both sides.  4. Cover and refrigerate for 15 minutes.  5. Remove the skewers from marinade.  6. Grill skewers 3 minutes on each side, or until shrimp are opaque.  7. Brush the skewer with the unused marinade as you flip the shrimp on the grill.  8. Serve with a light drizzle of the remaining mixture.

Strawberry Kiwi Chia Pudding

Ingredients  - 1 serving 1/2 to 3/4 cup coconut milk (may substitute with regular milk, almond milk, etc) 2 teaspoons real maple syrup 2 T  chia seeds Cinnamon to taste 1/2 kiwi, sliced 3 strawberries, sliced Sliced almonds, optional Directions Place coconut milk and maple syrup in mason jar. Apricots and Cream Mask Submitted by:  Vitamix Dietary Interest:   gluten-free Yield: 2 1/2 c (600 ml) Difficulty: Easy Total Time: 10 Minutes Print: 8.5x11 Save to: Recipe Book Ingredients 1 cup unsweetened dried apricots 1 cup warm water 2 Tablespoons nonfat milk powder 2 Tablespoons uncooked oats Directions Soak dried apricots in warm water until soft. Place apricots with soaking water and the rest of the ingredients into the Vitamix container and secure lid. Select Variable 1. Turn machine on and slowly increase speed to Variable 10, then to high. Blend for 30 seconds. Apply to face and let mask dry, about 15-20 minutes. Wipe off with damp cloth
