Eric Lopez's One Pot Meal-Really Good and Easy


Chicken thighs
2c white wine
2 cloves garlic,minced
1/2 onion,diced
1/2 red bell pepper,diced
2 celery,sliced
1 tomato,diced
Salt and Pepper
3 potatoes,chopped
S and P the chicken and brown.Add veggies and wine and bring to simmer.Top with red potatoes and simmer 45 min.
